  • 800g potatoes (Maris Piper or Russet), cut into thick fries
  • 3 tbsp olive oil
  • 1-2 tsp Truffle Salt
  • 40g Parmigiano-Reggiano, finely grated

Instructions

  1. 1Preheat oven to 220°C (425°F). Soak cut potatoes in cold water for 30 minutes, then pat completely dry.
  2. 2Toss the dry fries with olive oil on a large baking sheet. Spread in a single layer without crowding.
  3. 3Roast for 20-25 minutes, flipping halfway, until golden and crispy.
  4. 4Remove from oven and immediately toss with truffle salt and grated Parmesan while still hot.
