Guide to Truffle Varieties
Learn about different truffle types, flavors, and when they're in season.
Black Winter Truffle (Tuber Melanosporum)
Known as the Périgord truffle, this is the most prized black truffle worldwide. Harvested November through March, it has an intense, earthy aroma with notes of hazelnut and chocolate. Perfect for pasta, risotto, and eggs. Albania's forests produce exceptional specimens at competitive prices.
White Alba Truffle (Tuber Magnatum)
The rarest and most expensive truffle in the world. Available October through December, it has a powerful garlicky, honey-like aroma. Best served raw, shaved over simple dishes like eggs, risotto, or carpaccio. Even a few grams transform a meal.
Summer Truffle (Tuber Aestivum)
A milder, more affordable option harvested June through August. Lighter in color and flavor than winter truffles, it's ideal for beginners or dishes where you want a subtle truffle note. Excellent in bruschetta, salads, and light pasta.
Burgundy Truffle (Tuber Uncinatum)
Harvested September through November, this autumn truffle sits between summer and winter varieties in intensity. It has a pleasant hazelnut aroma and works well in sauces, stuffings, and autumn dishes.
