Fresh Truffles: The Golden Rules
Fresh truffles are living ingredients. Their aroma peaks within days of harvest and fades quickly if stored incorrectly. The goal is to keep them cool, dry, and breathing—not sealed in plastic.
Short-Term Storage (3-7 Days)
Wrap each truffle individually in clean paper towel. Place in a glass jar or airtight container with a loose lid—not fully sealed. Store in the warmest part of your refrigerator (usually the vegetable drawer, around 4°C). Change the paper towel daily to absorb moisture. Never store truffles in rice—it dries them out and absorbs their precious aroma.
What to Avoid
Do not wash truffles until just before use. Avoid plastic bags, which trap humidity and cause mold. Do not freeze fresh truffles unless you plan to use them only for cooking (freezing destroys the raw aroma). Keep truffles away from strong-smelling foods—they absorb odors easily.
Shelf-Stable Products
Truffle oils, honey, salt, and condiments should be stored in a cool, dark cupboard away from direct sunlight. Once opened, truffle oil is best used within 12 months. Our products include storage instructions on each label.
